Just in time for New Years and the SuperBowl, I present my recipe for caramel corn. The caramel itself has a lot of applications besides drizzled over popcorn but there’s just something about that salty with the sweet that makes this so addictive.
A warning – this recipe is not waistline-friendly so eat at your waist’s peril.
Ultimate Party Caramel Corn
2 bags microwave popcorn, popped 2 sticks of butter, melted 1 lb light brown sugar (half a standard bag) 1 cup corn syrup 1 14oz can sweetened condensed milk
1. In a saucepan, combine butter, brown sugar, corn syrup and sweetened condensed milk over low to medium heat. 2. Bring mixture to a slow boil, stirring continuously. 3. Boil until caramel is at a soft-ball stage*. 4. Put popcorn in a large bowl and pour caramel over the top. Mix thoroughly to coat the popcorn evenly.
*To tell if caramel is done, drip some of the caramel into some ice water. If the dollop retains its shape but is easy to squish, then it is in soft-ball stage.
